Strawberry -Coconut-Lime Popsicles anyone?
Rumor around the interwebs is that it’s Popsicle week!? I didn’t know there was such a thing as Popsicle week but I love popsicles so i am definitely not complaining. It’s only June and the heat and humidity here In North Carolina have combined into a deeply oppressive force, as they do every summer. I guess but somehow i’m never quite prepared.
Well I have been so busy lately working on about 5 revolving projects at once and getting ready to move into a new house! My current house is great and all but my new house will have a fireplace and despite the 100+ degree heat I just cannot stop dreaming of cozy days in late fall spent wrapped up in front of the fire with hot cider (and pumpkin in some form). Add in a coffee shop and multiple amazing local restaurants just a block away and you know, who wouldn’t be stoked?
Anyway, one of those projects I mentioned involves a wide variety of digital printable products and projects for my shop! I will be giving away free printables via my mailing list regularly and they are SO cute so you had better sign up. Freebies will be sent out on a once per week basis and will include my monthly planner design, DIY patterned notebooks, posters, cards, and more. Back to the ice pops which, lets be honest, is what we’re all here for!
Stawberry-Coconut-Lime Popsicles
Serves 6
Ingredients
- 1/2c Ripe Strawberries
- 1 can of Coconut Milk
- 2 Tbs sugar
- 2 tbs Lime juice
-Clean Strawberries and cut into small chunks
-Melt sugar in lime juice over medium heat and let cool
-Put all ingredients into blender and blend until smooth
-Pour blended mixture into popsicle molds, place in freezer and allow to chill for 4-8 hours.
-Remove from molds by running warm water over the mold until the popsicles slide out.
-Enjoy!
